FLUFFY LIME CREAM PIE | |
1 1/2 c. graham cracker crumbs 1/4 c. sugar 1/3 c. melted butter CRUST: Combine graham crackers, sugar and butter; pat into 9-inch pie pan. Bake at 375 degrees for 8 minutes; cool. Reduce oven to 300 degrees. Juice of 4 limes (about 1/2 c.) 1 can sweetened condensed milk 1 tbsp. sugar Beat egg yolks until light and fluffy. Gradually beat in lime juice and then condensed milk. Beat egg whites to soft peaks. Gradually add sugar and beat to stiff peaks. Gently fold 1/3 of whites into yolk mixture. Fold in remaining whites. Pile in pie shell. Bake at 300 degrees for 15 minutes. TOPPING: Beat 1 cup cream to soft peaks. Gradually add 3 tablespoons sugar and beat until stiff. Spread over pie. |
