GERMAN POTATO SOUP | |
Peel and dice about 1 to 1 1/2 pounds (6-8 medium size) potatoes, put into large covered kettle, add enough water to cover potatoes beyond 1 inch (about 1 1/2 quart water). Add 1 teaspoon of salt and some pepper if desired. Simmer until potatoes are done. In a skillet brown 2-3 strips of diced bacon and 1 large to medium size chopped onion. When golden brown, add mixture to potatoes and simmer for 5 more minutes to cook the flavor through. Serves about 4-6. |
