SQUASH CASSEROLE 2 
1 qt. boiled squash
1 tsp. sugar
1 tsp. salt
1/2 c. finely chopped onions
2 beaten eggs
1/2 tsp. pepper
1/4 lb. grated Cheddar cheese
2 c. crushed Ritz crackers
1/4 stick butter or 1 slice chopped bacon

Boil squash, sugar, onion, and salt until tender and drain. Mash and drain. Let cool, then ad eggs, pepper, cheese, 1 1/2 cups cracker crumbs, and butter. Pour into greased baking dish and top with remainder of cracker crumbs. Sprinkle with paprika. Bake at 350 degrees for 45 minutes.
