SMITH HOUSE CASSEROLE 
1/4 c. mayonnaise
1/4 c. chopped onion
3/4 c. Ritz cracker crumbs (divided)
1 egg, beaten
1 tsp. sugar
1/4 tsp. salt
1/8 tsp. pepper
1 1/4 lb. yellow squash, boiled and chopped
1/2 c. shredded Cheddar cheese, divided
1/4 c. cottage cheese (optional)

Combine mayonnaise, onion, 1/2 cup cracker crumbs, egg, sugar, salt, pepper, 1/4 cup cheese and cottage cheese if desired. Add squash mixture. Pour into greased 1 quart casserole. Sprinkle remaining cracker crumbs over squash mixture. Bake uncovered at 350 degrees, 25-30 minutes. Sprinkle remaining cheese on top. Bake until cheese melts. Serves 4.
