SMITH HOUSE SQUASH CASSEROLE 
1/2 c. mayonnaise
Onion, chopped
1 c. crackers, divided and crushed
2 eggs, beaten
2 tsp. sugar
1/2 tsp. salt
1/4 tsp. pepper
2 lb. cleaned squash, boil and mashed
1/2 c. cheddar cheese, shredded

Combine mayonnaise, onion, 1/2 crackers, eggs, sugar, salt and pepper. Add mashed squash; mix well. Pour squash mixture into a lightly greased 2-quart casserole dish. Sprinkle remaining cracker crumbs over squash mixture. Bake, uncovered, at 350 degrees for 25 minutes; sprinkle cheese on top. Bake 5 minutes more or until cheese melts. Yield: 8 servings.
