TERRIFIC CORNBREAD 
1 1/4 c. unbleached white flour
3/4 c. whole grain cornmeal (stone-ground if possible)
4 tbsp. sugar
5 tsp. baking powder
3/4 tsp. salt
1 egg
1 c. milk
2 tbsp. melted butter

Sift together all dry ingredients. Beat the egg with milk and add it to the flour mixture, along with melted butter. Stir; mix well. Spread batter in a buttered 9-inch baking dish.

Bake in preheated oven at 375°F for 30 to 35 minutes or until cornbread is lightly browned around the edges.
