PUMPKIN ROLL 
3 eggs
1 c. sugar
2/3 c. pumpkin
1 tsp. baking soda
1/2 tsp. cinnamon
3/4 c. flour
8 oz. cream cheese
1 c. confectioner's sugar
3/4 tsp. vanilla
2 tbsp. butter

Grease jelly roll pan and line with waxed paper. Mix eggs, sugar, pumpkin, soda, cinnamon and flour. Pour into jelly roll pan and sprinkle with 1/2 cup walnuts or pecans. Bake 15 minutes at 375 degrees. Take out ad turn on a linen dish towel that has been sprinkled with powdered sugar. Peel off waxed paper. Roll longways in towel and cool. Mix remaining ingredients, cream together and spread on pumpkin roll. Cut into two rolls. Re - roll and refrigerate. Can freeze. Slice when ready to use.
