SOUTHERN FRIED CHICKEN 
1 c. all-purpose flour
2 tsp. pepper
1 tsp. salt
1 tsp. paprika
1/2 tsp. poultry seasoning
1/4 tsp. garlic powder
1 egg, beaten
1/2 c. milk
1 (3 lb.) chicken, cut up

Combine first six ingredients in a pie plate or deep bowl; stir to mix well. Combine egg and milk in a small deep bowl and mix well. Heat 1" of oil in a large skillet to 350 degrees. Skin chicken if desired. Dredge chicken in flour mixture, then dip in egg mixture and roll in flour mixture again. Place chicken in skillet and fry 15 minutes or until golden brown, turning to brown both sides. Drain on paper towels.

Serves 4.
