CRISPY SOUTHERN FRIED CHICKEN 
1 (2 1/2 lb.) chicken, cut up
1 egg
2/3 c. water
1/4 c. oil
3/4 c. flour
2 tsp. sugar
2 tsp. salt

Beat together egg, water and 1/4 cup oil. Add sugar, salt and flour. Mix until smooth. Dip chicken, one piece at a time into batter and fry about 20 to 25 minutes in an uncovered skillet with 1 1/2 cups oil heated to about 360 degrees.
