EASY POTATO SKINS 
6 lg. potatoes
Vegetable oil
Season to taste with salt & pepper

Preheat oven to 475 degrees. Generously grease a cookie sheet with oil. Scrub potatoes and pat dry. Pare off the skins about 1/8 inch thick, place skins on cookie sheet, coat both sides with oil, leave skin side up. Sprinkle with salt and pepper. Bake 10 to 12 minutes until crisp. Serve immediately.
