IDAHO POTATO SKINS 
4 Idaho potatoes
1/4 c. butter, melted
Salt & Pepper

Wash and dry potatoes. Prick with fork. Bake in 425 degree oven for about 50 minutes. Cool slightly. Cut into quarters and scrape out most of the pulp. Place skin side down on baking sheet. Brush with melted butter and bake until crispy. Salt and pepper to taste. Makes 16 servings.
