HARVEST MUFFINS 
2 c. sugar
4 c. flour
3 tsp. cinnamon
4 tsp. baking soda
1 tsp. salt
1 c. raisins, covered with water & drained
1 c. coconut
4 c. shredded carrots
2 apples, shredded
1 c. pecans
6 eggs
2 c. vegetable oil
1 tsp. vanilla

Sift dry ingredients into a large bowl. Add raisins, coconut, carrots, apples and pecans. Stir well to coat them. Add the eggs, oil and vanilla, stirring until combined. Spoon batter into cupcake tins and bake at 375 degrees for 20 minutes. Makes about 30 to 36 muffins.
