BROCCOLI CASSEROLE 
2 pkg. (8 to 10 oz. each) chopped broccoli, thawed
1 stick butter
1 c. chopped onion
1/2 lb. Velveeta cheese
1/2 c. evaporated milk
1 can cream of chicken soup
1 c. cooked rice
Cracker crumbs

Place broccoli in a large bowl. In a large skillet saute onions in the butter. Remove from heat and add the milk, cheese and soup. Return to heat and stir constantly until cheese has melted. Pour this mixture over the broccoli; add the rice. Mix well and pour into a large casserole. Sprinkle with crumbs. Bake at 350 degrees for 45 minutes.
