VERMONT BAKED BEANS 
1 pkg. pea beans or Northern, yellow, etc.
1 sm. onion
1/8 lb. salt pork
1/2 tsp. salt
1/2 tsp. dry mustard
1/2 c. maple syrup, a dark grade
Also add 1/4 c. tomato sauce

Wash beans. Simmer until skins begin to burst. Put them in bean pot over the onion and salt pork and all the other ingredients. Fill bean pot with water to top. Cover and bake in moderate oven (375 degrees) about 3 hours. Uncover pot, raise pork to top and brown.
