BAKED FISH WITH MUSHROOM WINE
SAUCE
 
Serves 2

2 tsp. butter
1 c. chopped mushrooms
2 tbsp. lemon juice
Sm. clove garlic, minced
Dash of salt and pepper
10 oz. fish fillets
1/4 c. chopped scallions
1/4 c. dry vermouth
1 tbsp. chopped parsley, optional

Preheat oven to 400 degrees.

Saute' mushroom, garlic, lemon juice, and seasonings in butter over high heat until most of the liquid has evaporated. Place over high heat until most of the liquid has evaporated. Place fish in 1 quart casserole dish. Top with mushroom mixture, scallions and vermouth. Bake until opaque and breaks easily, about 10 minutes.

Equals: 4 proteins, 1 1/4 vegetables, 1 fat, 30 optional cal.
