PASSOVER FRUIT KUGEL 
8 eggs
2/3 c. sugar
1/2 c. oil
No. 2 can crushed pineapple (save juice)
3 apples, peeled and grated
1/2 - 3/4 c. matzo meal
1 lb. prunes
1/2 lb. apricots

Preheat oven to 325 degrees. Combine eggs, sugar and oil. Combine pineapple with the juice, apples and matzo meal. Combine the two bowls thoroughly. Add prunes and apricots, chopped coarsely. Bake in an 11x7 pan for 45 minutes or until golden brown. May be served with sour cream.
