SOY CHEESE FROM SOY FLOUR 
1 c. soy flour
3 c. water
Juice of 2 lemons

Place boiling water in saucepan. Mix 1 cup flour to a paste with cold water. Beat it with an egg beater 1 minute and add it to the boiling water. Let this cook 5 minutes, then add lemon juice and set aside to cool. Strain the curds through fine cloth. This cheese can be used as a base for patties and other entrees or it may be pressured cooked for 1 hour at 10 pounds and serve in salads.
