ZUCCHINI CAKE 
3 c. grated zucchini
3 c. granulated sugar
1 1/2 c. oil
1 1/2 tsp. cinnamon
4 eggs
3 c. flour
2 tsp. baking powder
1 tsp. baking soda
1/2 tsp. salt
1 c. chopped walnuts

Grease and flour 9 x 13 inch pan. Mix squash, sugar, oil and eggs. Combine dry ingredients and mix in nuts. Bake at 300 degrees for 90 minutes. Cool before removing from pan. Ice with cream cheese frosting.

FROSTING:

1 (8 oz.) pkg. cream cheese
4-6 tbsp. butter
1 tsp. vanilla
2 c. powdered sugar

Beat well with mixer. You may need a little more milk if it needs to be thinner for spreading.
