ZUCCHINI CAKE 
3 c. grated zucchini
3 c. sugar
1 1/2 c. corn oil (a must)
4 eggs, lg.
1 c. chopped walnuts (2 c. is better)
1 1/2-2 tsp. vanilla

Blend eggs and sugar until sugar is dissolved. Add oil and beat until well mixed. Add zucchini, nuts and vanilla; set aside.

Sift together 3 cups flour, 2 teaspoons baking powder, 1 teaspoon baking soda and 2 teaspoons cinnamon. Beat in zucchini mixture. Bake in greased angel food pan. Bake 1 hour at 350 degrees. May need 5-15 minutes more. Let cool in pan.

FROSTING:

6 oz. cream cheese
1/2 cube butter (1/4 c.)
4 c. powdered sugar
2 tsp. vanilla
