CHICKEN ALLA CACCIATORE 
1 chicken, cut into 1/8th's
Flour (for coating)
Oil (for browning)
1 lg. onion, chopped fine
1 stalk celery, cut up
Garlic, minced (4-5 cloves)
Mushrooms (about 1/2 lb., cut up)

Coat chicken in flour. Brown lightly in oil. Take out chicken. Saute in pan onion, celery, garlic and mushrooms

Add chicken and: Pinch cinnamon 1/4 c. red wine 1 c. tomato juice

Cover and cook slowly until chicken is tender (about 1 hour). Serve over rice or noodles.

Recipe is for 1 chicken. Double or triple ingredients accordingly.
