HOMEMADE POTATO SOUP 
3 cups peeled, chopped potatoes
1 cup water
1/2 cup celery slices
1/2 cup sliced carrots
1/4 cup chopped onion
1 tsp. parsley flakes
1 chicken bouillon cube
1/2 tsp. salt
1 1/2 cups milk
1 tbsp. all-purpose flour
1/2 lb. American cheese, diced
dill, for garnish (optioanl)

In a large saucepan combine potatoes, water, celery, carrots, onion, parsley flakes, bouillon cube and seasoning. Mix well, cover; simmer 15 to 20 minutes or until vegetables are tender.

Add milk to flour, mixing until well blended. Add milk mixture to vegetables; cook until thickened. Add cheese and stir until melted.

Garnish with chopped dill (optional). Makes 6 to 8 servings.

I followed the directions but used a flour-butter-milk roux technique and added the Velveeta cheese to that, then added it to the veggie-chicken broth mixture. I also sprinkled some chives on top of my soup when it was done. Yum! I would try that recipe again, perhaps with real bacon bits.

Just made this simple recipe and it came out terrific. Added a few thinks like broccoli and a bit of ham and reduced the cheese to a small handful and man was it awesome.

Very easy and delicious. Great as is!!! or.... I have also tried my flare, I added some italian seasonings (that include rosemary), thyme, and pepper. My cheese choice was a combo of asiago, parmesan, cheddar and provolone. Both ways were exceptional!
