GREEN DIP 
3 c. clean fresh cilantro leaves
1 c. sliced scallions (including green tops)
4 fresh jalapenos, stemmed & halved
1 tbsp. salt
2 1/2 c. sour cream

In a food processor, combine the cilantro, scallions, jalapenos and salt. Process until smooth, scraping down once or twice. In a bowl whisk the sour cream until smooth and shiny. Stir in the puree and combine well. Taste, correct the seasoning and refrigerate, covered until serving time.

This is very delicious served with cool poached shrimp and as a nice change from salsa with corn chips.
