AUSTRIAN TOMATO SALAD 
4 med. tomatoes, thinly sliced
1 green pepper, cut into thin strips
1 sm. onion, thinly sliced
1/4 c. snipped fresh parsley
1/4 c. cider vinegar
1/4 c. salad oil
2 tbsp. sugar
1/2 tsp. salt
Dash of pepper
2 tbsp. water

In medium bowl, stir together tomatoes, green peppers, onion and parsley. Set aside. For dressing, stir together vinegar, oil, sugar, salt, pepper and water. Pour over tomato mixture and toss. Cover and let stand at room temperature for 30 minute to 1 hour. Serve with slotted spoon. Makes 5 cups (6 to 8 servings).

NOTE: The mixture can also be spread on a hoagie sandwich or a bed of greens.
