QUICHE LORRAINE 
1 c. Bisquick baking mix
12 slices bacon, crisply fried & crumbled
1 c. shredded natural Swiss cheese
1/3 c. minced onion
4 eggs
1 1/2 to 2 c. light cream
3/4 tsp. salt
1/4 tsp. sugar
1/8 tsp. cayenne pepper

Heat oven to 425 degrees. Per directions on Bisquick box make smooth dough and roll dough 2 inches larger than inverted 9 inch pie pan. Ease into pan and flute edge. Sprinkle bacon, cheese and onion in crust. Beat remaining ingredients with rotary beater until well blended; pour over bacon mixture. Cover edge of crust with 2 inches foil to prevent excessive browning; remove foil last 15 minutes of baking. Bake 15 minutes. Reduce oven temperature to 350 degrees and bake 35 minutes longer until knife comes out clean. Let stand a couple of minutes before serving. Serves 4.

For Variation: Omit onion and add dash of nutmeg. Also good with mushrooms.
