LEMON ZUCCHINI COOKIES 
3/4 c. butter
3/4 c. sugar
1 egg
1/2 tsp. lemon extract or 1 tsp. lemon rind
2 c. flour
1 tsp. baking powder
1/2 tsp. salt
1 c. shredded unpeeled zucchini
1 c. chopped walnuts

GLAZE:

1 c. powdered sugar
1 1/2 tsp. lemon juice

Cream butter and sugar. Add egg and lemon extract. Stir in sifted dry ingredients. Mix in zucchini and nuts. Drop by teaspoonfuls onto greased cookie sheets. Bake in 350 degree oven for 15 to 20 minutes. Let cool slightly. Glaze. Makes 3 dozen.
