MERRY CHERRY CHEESECAKE BARS
CHRISTMAS COOKIES
 
CRUST:

1/3 c. COLD butter
1/3 c. firmly packed brown sugar
1 c. flour

FILLING:

8 oz. pkg. cream cheese
1/4 c. sugar
1 egg
1 tbsp. lemon juice
1/4 c. EACH chopped glazed red and green cherries

In small bowl cut butter in chunks. Add brown sugar and flour and mix at low speed. Then beat at medium speed until well mixed. Reserve 1/2 cup of this crumb mix for topping. Press remaining mix in 8 inch square pan and bake at 350 degrees for 10 to 12 minutes. Prepare filling by mixing all ingredients together and beating until fluffy. Spread filling over crust and sprinkle with remaining crumb mix. Bake 18 to 20 minutes or until filling is set. Cool, store in refrigerator.
