FUDGE BAR CHERRY CHEESE CAKE 
FUDGE BAR CRUST:

1/2 c. plus 2 tbsp. oatmeal
1/4 c. applesauce
1/2 c. sugar
1/3 c. cocoa
2 tbsp. unbleached flour
1/4 c. honey
1 tbsp. vanilla

Mix oatmeal and applesauce; let sit for 5 minutes. Mix in rest of ingredients. Prepare an 8x11-inch baking dish with non-stick cooking spray. Spread batter evenly and bake for 10 minutes in a preheated 325°F oven.

CHEESE CAKE:

3 pkgs. (8 oz. each) cream cheese
3/4 cup sugar
3 eggs
1 tablespoon vanilla
1 can cherry pie filling

Mix cream cheese and sugar together until creamy then add eggs and vanilla. Don't overbeat after adding eggs. Pour on top of fudge bar crust and bake for 40 minutes at 325°F.

Cool and chill overnight. Top with cherry pie filling.
