SQUASH CASSEROLE | |
3 c. fresh squash, chopped 1 or 2 med. onions, chopped 1 1/2 sm. pkg. Ritz crackers, crushed 1/2 c. melted butter 2 c. grated mild Cheddar cheese 3 eggs 1 c. milk Salt & pepper to taste Cook squash and onions until tender; drain off all liquid. Mash. Beat together egg and milk. Add to mashed squash. Mix cheese, butter and cracker crumbs. Add about 1/2 of this mixture to squash. Pour into buttered casserole dish. Sprinkle remaining crumbs on top. Bake 20-30 minutes at 400 degrees. |
