FRIED CHICKEN SOUTHERN 
2 1/2 - 3 lb. frying chicken, cut up
1/2 c. flour
1 tsp. salt
1/2 tsp. paprika
1/4 tsp. pepper
Salad oil

Wash chicken. Pat dry Mix flour, salt, paprika and pepper. Coat chicken with mixture. Shake off excess flour.

Heat salad oil, 1/4 inch, in large skillet. Cook chicken over medium heat 15- 209 minutes or until light brown. Reduce heat. Cover. Simmer 25-30 minutes until large pieces are fork tender.
