SOUTHERN FRIED CHICKEN 
1 chicken, cut into 10 pieces
3/4 c. flour
1 tsp. salt
1 tsp. pepper
1 tsp. paprika

Mix dry ingredients and roll raw chicken in this mixture until well-coated. Using about 1 inch of oil in a covered skillet, bring oil to 375 degrees and add chicken and cover skillet. Fry approximately 20 minutes on each side until well browned, turning only once. Drain on paper towels before serving. May be kept warm in the oven for a short time before serving.
