SOUTHERN FRIED CHICKEN 
1 chicken, cut up
1 tbsp. fat
1/3 c. flour
1 tsp. light seasoned salt
1/2 tsp. paprika
1/4 tsp. poultry seasoning
1/4 tsp. onion or garlic powder
1/8 tsp. black pepper
1/2 c. water

Remove all skin and visible fat from the chicken. Combine flour and spices in plastic bag. Shake chicken, one to two pieces at a time, in seasoned flour. Set aside on a plate or waxed paper. Coat all chicken with flour before heating fat.

Heat 1 tablespoon fat in nonstick skillet, add chicken. Brown over medium heat, about 10 to 12 minutes per side, until golden brown on all sides.

Add 1/2 cup water to chicken. Cover tightly and cook over low heat for 30 minutes.

Remove cover, turn up heat, and cook off any remaining liquid. Continue frying chicken until reddish-brown, 1 to 2 minutes. Serving size: 1/4 recipe = 245 calories.
