FRIED CORNMEAL MUSH | |
1 c. cornmeal 1 c. cold water 2 1/2 c. boiling water 1 tsp. salt 2 tbsp. butter Flour Syrup or jelly Grease loaf pan, approximately 9x5x3 inches. Bring 2 1/2 cup water to a boil. Add salt. Mix cornmeal and cold water in a bowl. Stir into boiling water. Cook, stirring constantly until mixture thickens and boils. Cook over low heat, about 10 minutes. Spoon into pan. Cover; chill at least 12 hours. Invert pan to unmold cornmeal mush. Cut loaf into 1/2 inch slices. Melt butter in large skillet. Coat slices with flour; brown on each side. Serve hot with syrup and, if desired with bacon, ham, or sausage. 9 servings. |
