FRIED CORNMEAL MUSH 
1 c. yellow cornmeal
1 tsp. salt
1 tsp. sugar
1 c. cold water
3 c. boiling water
Butter or cooking oil
Flour
Cornmeal

Combine dry ingredients with cold water and gradually add to boiling water, stirring constantly until mixture thickens and boils. Cover turn heat low and cook 15 to 20 minutes. Pour into greased loaf pan. Cool and chill at least 10 hours. Unmold and cut cornmeal mush in 1/2 inch slices. Heat skillet containing butter and/or cooking oil. Coat slices with flour or cornmeal (or mixture of both). Brown on each side in skillet. Serve hot with syrup. Yield: 8 servings.
