POTATO SOUP 
2 c. diced uncooked potatoes
1 qt. boiling water
1 pt. milk
1 onion, cut up
2 tbsp. finely chopped parsley
4 tbsp. butter
1 tbsp. flour
1 tsp. salt
Dash of pepper

Simmer potatoes in water until soft. Drain; reserve 1 pint of stock. Heat milk and onion in top of double boiler. Saute parsley in butter; stir in flour and add to milk. Combine potatoes and milk; simmer for 2 or 3 minutes. Add salt and pepper. Onion may be removed before serving. Yield: 4 servings.
