COUNTRY OMELET | |
2 c. cooked sliced potatoes or hash browns 1 thinly sliced onion 1 tbsp. shortening or bacon grease 7 eggs 2 tbsp. milk 1 tsp. salt 1 c. grated cheese 1 c. cooked, diced meat (ham, bacon or sausage or all three) Over medium heat brown potatoes and onion in shortening (use non-stick pan or spray with Pam) for about 15-20 minutes. Sprinkle meat over potatoes. Beat eggs, milk, salt, and pepper. Pour over potatoes and meat. Sprinkle cheese on top. Cover and reduce heat to simmer. Cook until edges are set and omelet is puffy. Cut in wedges. Serve hot. Serves 4. |
