CHOLESTEROL-FREE OMELET 
4 whole egg whites
1 tbsp. skim milk
3 pinches yellow food coloring
1 tbsp. diced onions
Pinch salt and pepper
1/2 c. cooked rice or leftover mashed potatoes
3 whole slices cholesterol free cheese, cubed
1 whole green pepper, chopped (optional)
1 whole red pepper, chopped (optional)
1 whole tomato, chopped (optional)

In a mixing bowl, combine egg whites, milk, food coloring, onion, salt and pepper with a fork. Coat a 9 inch baking dish with no stick cooking spray. In center of dish, place rice or potatoes in a mound and flatten. Pour over egg mixture over all and top with cheese. Add chopped green and red pepper and tomato if desired. Bake at 350 degrees for about 15 minutes. Yield: 1 to 2 servings.
