TEXAS CAVIAR (BLACK - EYED PEA SALAD) | |
1 lb. black-eyed peas 1/2 c. diced bell peppers 2/3 c. diced pimentos 1/3 c. diced onions 1/2 c. finely sliced green onions 2 tsp. finely chopped garlic 2 c. oil & vinegar dressing 2 finely chopped jalapeno peppers Soak black-eyed peas in water for 6 hours or overnight. Strain water off peas; boil peas in fresh water until tender. Do not over cook. Strain most of the liquid off peas, and add oil and vinegar dressing. When peas have cooled, add all other ingredients. Add salt and pepper to taste. |
