POTATO TOPPED CHEESY MEAT ROLL 
1 1/2 lb. extra lean ground beef
1/2 c. uncooked oats
2 eggs, beaten
1/2 tsp. salt
1/2 c. chopped onion
8 thin ham slices
2 12/ c. mashed potatoes
1 lb. ground turkey
1 1/2 c. light & tangy V-8 juice
2 tbsp. parsley
1/4 tsp. pepper
1/2 tsp. chopped garlic
1 1/2 c. (8 oz.) Mozzarella cheese, grated

Combine first 10 ingredients; mix well. Shape into a 14"x10" rectangle on a sheet of waxed paper. Arrange ham slices over meat; top with Mozzarella cheese. Begin at short end, roll meat jelly roll fashion, lift waxed paper to help roll. Place roll seam side down in lightly greased 13"x9"x2" baking dish. Press ends and edges to seal. Bake at 350 degrees for 2 hours. Remove from oven and drain fat. Spread mashed potatoes over the top and sides of the meat. Drizzle 1 tablespoon over the top of the potatoes and sprinkle with 1/2 teaspoon of paprika. Bake an additional 20 minutes at 350 degrees. Serves 10.
