SAUSAGE AND RICE CASSEROLE 
1/2 lb. bulk sausage
3/4 c. grated carrots
1/2 c. chopped celery
1/2 c. fresh or canned mushrooms
4 c. cooked rice
1/2 c. grated cheese

Cook first set of ingredients over medium high heat until meat is well browned and no trace of pink remains, and celery is tender. Add 4 cups cooked rice. Place in baking dish. Bake covered in 350 degree oven for 25 minutes. Top with 1/2 cup grated cheese and bake until cheese is melted.

NOTE: This can be prepared using leftover rice; if you are cooking the rice for this casserole, use chicken stock instead of water, and stir in 2 tablespoons butter after cooking).
