RICE WITH PORTUGUESE SAUSAGE 
1 ring or about 2 lbs. or Portuguese sausage, sliced
1 med. onion, chopped
1/4 c. olive oil

Saute until the sausage is almost done. Then add:

1 can tomato sauce
8 c. water
1 (10 oz.) box frozen sugar peas or broccoli (optional)

Cook for 3/4 hour. Then add 3 cups of uncooked rice. Let simmer until all the water is gone. Can also be made with chicken or shrimp instead of the sausage.
