CHICKEN-FRIED LIVER 
1 1/2 lbs. skinned and deveined beef liver
3 tbsp. lemon juice
1/2 c. flour
1 tsp. salt
1/2 tsp. ground pepper
1/4 c. milk
2 tbsp. grated onion
1 egg, beaten
1 clove garlic, minced
1 1/2 c. fine cracker crumbs
1 c. shortening or oil

Cut liver into 1 x 1 1/2 inch strips and sprinkle with lemon juice. Combine flour, salt, and pepper. Combine milk, onion, egg, and garlic. Dip strips in flour mixture, then into egg mixture and finally into crumbs. Fry quickly in hot pan or 375 to 400 degrees in electric fry pan or wok. Drain. Serve with mustard, ketchup or sweet 'n sour sauce for dipping. Serves 6.

NOTE: Guaranteed to get the "kids" to eat liver!! Just don't try serving spinach at the same meal. See "Kids Will Eat Spinach."
