OATMEAL COCONUT COOKIES 
1/2 c. (1 stick) butter
1/2 c. shortening (Crisco)
1 c. brown sugar
1 c. white sugar
2 eggs
2 c. all-purpose flour
2 tsp. baking soda
1 tsp. baking powder
1 tsp. salt
1 tsp. vanilla
2 c. quick-cooking oatmeal
1 c. coconut flakes
1 c. walnuts or pecans, chopped (optional)

Cream butter, shortening and sugars. Add eggs and beat well. Add flour along with baking soda, baking powder, salt and vanilla. Then add oatmeal, coconut and nuts (if desired).

Shape into small balls and flatten in the palm of the hand. Dip into sugar and place on cookie sheet 2-inches apart. Bake at 350°F for 8 to 10 minutes.
