1 c. whole ground (stone ground) cornmeal 1 c. bran (not prepared cereal, the kind from the mill) 2 tsp. baking powder 3/4-1 tsp. salt 1 c. soy milk, plus extra (about 1/2 c.) water to make desired consistency 3 tbsp. safflower oil or Mazola 1 egg Add liquid to dry mixture and beat. Drop from tablespoonfuls onto a hot griddle which is lightly oiled with same kind of oil as is in mixture. When bubbles are rapidly forming, flip with spatula and cook the other side a few minutes and then sit down and enjoy them while hot with honey. Tastes great and no cholesterol and no dairy products. |
