CHICK PEA APPETIZER (HUMMUS) 
1 can (20 oz.) chick peas
3 cloves garlic
1/2 tsp. salt
1/4 c. sesame paste
1/4 c. lemon juice
2 tbsp. olive oil
1/2 tsp. cumin (optional)
Dash cayenne pepper (optional)

GARNISH:

Olive oil
Chopped parsley
Cumin or paprika

Pour contents of can into blender but reserve 1/2 cup of liquid and 6 chick peas. Blend 5-10 minutes until well creamed. Mash garlic with salt then add along with remaining ingredients to the blender and blend 5 more minutes. If too thick, add reserved liquid.

Pour into shallow serving bowl. Sprinkle with additional olive oil and garnish top with reserved chick peas, parsley and cumin or paprika. Serve as a dip with pita, pocket or cracker bread.

Yield: 8 servings.
