SPANISH RICE | |
1 lb. ground beef 6 slices bacon 1 med. onion, thinly sliced 1/4 c. chopped green pepper 3/4 c. uncooked regular rice 1/2 tsp. salt 1/8 tsp. pepper 16 oz. can tomatoes, undrained, cut up 8 oz. can tomato sauce 1/4 c. catsup 2 drops hot pepper sauce In large skillet, brown ground beef; drain well. Remove meat from skillet and set aside. In same skillet, cook bacon until crisp. Remove bacon; drain, reserving 2 tablespoons drippings in skillet. Crumble bacon; set aside. Add onion and green pepper; saute until crisp tender. Stir in ground beef, crumbled bacon and remaining ingredients. Bring to a boil; cover and simmer for 30 to 40 minutes or until rice is tender. 5 (1 cup) servings. |
