EGG BISCUITS 
1/2 lb. butter
2 eggs
4 c. flour
2 tsp. vanilla or lemon extract
1/4 tsp. nutmeg
2 c. sugar
1 lb. Ricotta cheese
1 tsp. baking soda
1 tsp. baking powder

Cream butter and sugar. Beat until creamy. Add eggs, one at a time, beating well after each addition. Add Ricotta cheese and vanilla. Beat for 1 minute. Add flour, baking powder, baking soda, nutmeg - gradually.

Drop by rounded teaspoon onto ungreased cookie sheets. Bake at 350 degrees for 12-14 minutes. Top with icing while still warm. Yields: 3 dozen.

ICING:

1/2 c. confectioners sugar
3-4 tbsp. milk
