CORNFLAKE BAKED CHICKEN 
24 chicken thighs or wing drumettes with skin
2 c. crumbed corn flakes
3/4 c. reg. or diet mayonnaise
1/2 c. milk
1 tsp. salt
1/2 tsp. pepper
Non-stick spray shortening

Dip chicken pieces in mixture of mayonnaise, milk, salt and pepper. Roll in cornflake crumbs. Spray cookie sheet with shortening. Bake 1 hour in 400 degree oven.

Great recipe! I used 18 pieces of thawed chicken and they baked for an hour. I used 2 racks in my oven. The top rack, much like how someone would protect a pie crust, could have used some foil. Maybe in the beginning and then removed to keep the flakes from burning? However, I had more than enough chicken for my 7 person dinner party. Enough of it came out right that it recieved compliments =D

Dipping the chicken in mustard is an excellent substitute for the mayonnaise and yes putting the pepper with the cornflakes ensures more spices on your chicken!

I was out of Corn Flakes so I used Honey Bunches of Oats, Vanilla. Came out pretty good with a touch of sweetness.

It was really good. It took the hour to bake. I added some basil, season salt, and some Bacon Bacon from Tastefully Simple, and some grated Parmesan cheese on top. I would make it again!

This recipe will work better if you mix the pepper and salt with the corn flake crumbs and not into the mayonnaise. You will get more of the spices this way.
