COUNTRY HAM 
Scrub ham thoroughly. Soak overnight covered in water to which you have added 1 pint of vinegar. Scrub again in morning.

Line roasting pan with heavy duty aluminum foil (takes 2 large pieces sealed together with "drugstore fold." Place ham on a rack IN FOIL, fat side down. Can cover with 1 pound of dark brown sugar; I don't.

Turn foil up on all sides and put in 1 quart of boiling water. Seal foil on all 3 sides, making a tent, leaving room for the steam. Make sure it is tightly sealed.

Cook ham 15 minutes per pound in 300 degree preheated oven. Remove from oven and let set in juice until room temperature. Drain off juice. Peel off rind and trim ham well of the fat. If you wish to serve the ham whole, you can decorate it with whatever you choose. ENJOY!
