COUNTRY HAM 
Country ham is at its succulent best when fried in an iron skillet. (If you use an electric skillet, set it around 350 degrees.) Place with fat edges toward center of skillet. Do not cook until dry. When turning slices first time, make several cuts into fat section to prevent buckling. Place fried ham in a meat platter that's pretty deep as you can pour plenty of red-eye gravy over it.
