BROCCOLI AND CHEESE CASSEROLE 
20 oz. pkg. frozen broccoli, or fresh
3/4 c. Minute Rice or regular, cooked
1/2 stick butter
2 tbsp. grated onion
1 can mushroom soup
1 sm. jar Cheese Whiz, or same amount Velveeta

Par boil broccoli until partly tender and drain; place in casserole. Add rice. In saucepan, melt butter and add onion; saute for a minute, but do not brown. Add the mushroom soup and cheese. Heat until cheese is melted. Pour over broccoli and rice. Bake 30 minutes at 350 degrees or 325 degrees for glass dish.
